What to do with peanut butter? Small ketogenic bites

Ingredients :

A ketogenic recipe for small peanut balls

Preparation :

  1. In a small bowl, mix the peanut butter, maple syrup, icing sugar, allspice and vanilla until smooth and sticky. Line a baking sheet with baking paper.
  2. Divide the mixture into 18 pieces, each about a teaspoon and place on the baking paper. Then shape each piece into a ball and press down to flatten into a disc. Make sure that the shape of all discs is the same.
  3. Test the size in a muffin pan to make sure the peanut disc is smaller than the diameter of the pan. Leave the pieces aside.
  4. Line the muffin pan with 18 muffin cases. Temper the chocolate.
  5. As quickly as possible, place 1/4 teaspoon of chocolate in the bottom of each case. Tap the mold against the work surface to distribute the chocolate evenly.
  6. Just as quickly, place the small disks of peanut butter in the middle of each box.
  7. Continue with an additional teaspoon of chocolate. If it begins to firm up, return to the bain-marie to soften. Once the chocolate has been distributed between the moulds, tap the mold against the work surface again to distribute it better.
  8. Refrigerate for 3 minutes, then take out and garnish with sea salt. Return to refrigerator for 15-25 minutes or until chocolate is firm. Store in the fridge.
